フォカッチャ
フォカッチャ(Focaccia)とはイタリア料理の平たいパンである。オリーブオイルやハーブで味をつけ、肉や野菜、チーズをはさんで食べる。フォカッチャの生地はピザの生地に似ており、強力粉、食物油、水、砂糖、塩、酵母|イースト菌で作る。フォカッチャは、主にサンドイッチ用に用いられる。フォカッチャは生地を麺棒か手で厚く押し延ばし、石釜で焼き上げる。完全に焼きあがる前のパン生地の表面の一部が膨らんで泡状になってしまうこともあるので、その場合はナイフなどで空気を抜く。あまりに表面が荒れてしまうと、サンドイッチに適さなくなってしまうのである。フォカッチャは、料理につけあわせとして出されることもあり、またピザの生地の代わりに使うことも出来る。日本のファミリーレストランではガスト (ファミリーレストラン)|ガスト、サイゼリヤ、ココスジャパン|ココスなどで食べることが出来る。
サイゼリヤではフォッカチオと呼ばれる。
